Long before tomato sauce defined southern Italian cooking, Naples was already simmering this one: mountains of onions collapsed slowly around beef until they turn into a dense, sweet rag霉. It is older than its name suggests and has nothing to do with Genoa.
Ingredients
- 2 lb (900g) beef chuck or shin, cut into chunks
- 4 lb (1.8kg) yellow onions, thinly sliced
- 3 tbsp extra virgin olive oil
- 2 oz (55g) pancetta, diced
- 1 celery stalk, finely chopped
- 1 carrot, finely chopped
- 1 cup dry white wine
- 2 tbsp tomato paste
- A few fresh basil leaves
- Salt and black pepper
Method
- Warm the olive oil in a heavy pot and render the pancetta until golden.
- Brown the beef chunks on all sides, then set them aside.
- Soften the celery and carrot, then pile in all of the sliced onions.
- Cover and let the onions sweat over low heat for 40 minutes, stirring now and then, until they collapse into a jam.
- Return the beef to the pot, pour in the white wine, and let it reduce.
- Stir in the tomato paste and basil, cover, and simmer on the lowest heat for 2.5 to 3 hours, until the beef falls apart.
- Season to taste and serve the rag霉 over rigatoni, with the beef alongside.
